This week I really wanted to focus on using leftovers to make the next meal. Here's what I came up with.
Monday- Grilled shrimp and zucchini, saffron rice, Greek cucumber salad, mixed berry sorbet
Tuesday- grilled chicken on top of cucumber salad mix (leftover) served on a bed of fresh spring mix salad, French bread, left over mixed berry sorbet
Wed- chicken pesto pananis (made with leftover chicken, mozzarella and french bread) with fruit
Thursday- tostadas and leftover saffron rice
Friday- Out to eat date night!
*Also, Ross and I will eat last night's leftovers for lunch the following day. I'm hoping that this will save us some $$$
